Coconut Sugee Cookies


Ingredients

· 500gms Ghee

· 300gms Soft brown sugar

· 2 tsp Vanilla essence

· 400gms Plain flour

· 300gms Sugee

· 200gms Desiccated Coconut

Topping

· 300gms Desiccated Coconut for tossing cookies

Method

1. Grease baking trays lightly with butter and preheat oven to 170°C.

2. Cream ghee, sugar and essence until light. Sift in flour. Add in sugee and desiccated coconut to combine well into a dough, Shape half a tbsp of mixture into a small round balls, the size of small lime. Roll in the remaining portion of desiccated coconut and place on tray then press with a fork.

3. Bake in a preheated oven for 15 minutes or until cookies turn golden. Leave on the tray for one to two minutes. Remove onto a wire rack to cool.
