Chocolate Chip Cookies

Ingredients
• 250gms Butter
• 200gms Brown sugar
• 50gms Castor sugar
• 2 tsp Chocolate Emulco
• 2no Egg
• 200gms Chocolate chips
• 100gms Almond Nibs

Sifted (combine)
• 350gms High Ratio flour
• 70gms Cocoa powder
• 1 tsp Baking powder
• 1 tsp Baking soda

Method
1. Line baking trays with greaseproof paper. Preheat oven to 170 ºC.

2. Cream butter, both types of sugar and emulco until creamy. Beat in egg until mixture is light and fluffy.

3. Stir in sifted ingredients with a metal spoon. Add in chocolate chips and stir in the nuts. Mix well to combine.

4. Drop mixture by the teaspoon onto prepared trays. Bake in preheated oven for 15 to 20 minutes or until cookies are cooked. Leave on the trays for a minute before transferring them onto a wire rack to cool.
